Five Fall Football Sunday Snacks
It’s official… fall and football season are here! That means, so are the Sunday snacks. Today, I’m sharing five delicious appetizers to snack on with your friends and family while cheering on your favorite team! This post was inspired by posts I previously put together with five easy summer appetizers and five easy holiday appetizer recipes, be sure to check out those post for more ideas. Let’s dive in!

My Dad’s Stuffed Hot Italian Peppers
What you need:
6-8 hot italian peppers
15 oz. Whole Milk Ricotta
Chopped or dry garlic (to taste)
1/2 package of cream cheese
2 cups grated Romano-Pecorino cheese
2 tsp of Anchovy paste (to taste)
2-3 tablespoons of seasoned Italian bread crumbs (or more to taste)
Black pepper
Baking dish
Fresh crusty bread
How to make:
Preheat the oven to 350 degrees. Wash peppers. Cut the tip off with the stem and slice down the center of one side, almost to the tip. Clear out the seeds- consider wearing gloves for this process as seeds can be hot.
Combine all filling ingredients (ricotta, chopped garlic, cream cheese, grated Romano-Pecorino cheese, anchovy paste, black pepper, bread crumbs) and mix until all blended together.
Carefully add the mixed filling to the peppers. A piping bag would work well during this process.
Place stuffed peppers into your baking dish. Sprinkle black pepper on top. Drizzle with olive oil, and bake for about 50-60 minutes, until cheese is bubbling and golden brown.
Slice fresh bread and enjoy alongside peppers!

Mini Meatballs + Dipping Sauces
Creamy Garlic Sauce- What you need:
2 Tablespoons unsalted butter
6 garlic cloves (grated or finely minced (1 Tablespoon))
2 Tablespoons flour
1 1/2 cups heavy cream
½ cup chicken stock (or vegetable stock or water)
2 Tablespoons fresh or minced parsley
Salt + fresh black pepper to taste
Grape Jelly Sauce- What You Need:
12 ounces chili sauce
10 ounces grape jelly
Meatballs- What You Need:
Mini frozen meatballs (found in the freezer section at your local grocery store)
Creamy Garlic Sauce- How to Make:
Melt the butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds.
Add the flour and cook until lightly golden, 1-2 minutes.
Slowly whisk in the heavy cream and chicken stock. Simmer, until thickened, 1-2 minutes.
Stir in the parsley and season with salt and pepper, to taste.
Grape Jelly Sauce- How to Make:
Add chili sauce and grape jelly to saucepan.
Cook over medium heat for about 10 minutes, stirring frequently.
Meatballs- How To Make:
Preheat oven to 350 degrees.
Place meatballs on a shallow baking pan.
Bake for 20-25 minutes, or until hot.

Crock Pot Street Corn Dip
What you need:
2 (8 oz) packages of cream cheese
2 (15.5 oz) cans of whole-kernel corn (drained)
1 fresh jalapeno pepper (chopped)
1 cup pepper jack cheese (shredded)
½ cup sour cream
2 tsp garlic (minced)
3 tsp tajin seasoning
¼ cup fresh cilantro (chopped)
2 tbsp cotija cheese (block)
Tortilla chips
How to make:
In a 6-quart slow cooker, add cream cheese, corn, pepper jack cheese, sour cream, garlic, 2 tsp of tajin, and cilantro.
Cover and cook on low for 2-3 hours. Stir occasionally.
Stir before serving in slow cooker. Transfer into bowls for serving and top with freshly shredded cotija cheese. Garnish with cilantro and sprinkle with tajin.
Serve with your favorite chips.

Jalapeno Popper Pinwheels
What you need:
4 flour tortillas
2 packages of cream cheese
1/2 pound of bacon
3 jalapenos
1 1/2 cups shredded cheddar cheese
How to make:
Take cream cheese out of fridge and let soften.
Cook bacon until crispy, let cool, and crumble.
Cut jalapenos, remove seeds, and dice finely.
In a large mixing bowl, add softened cream cheese, jalapenos, bacon, and cheddar cheese. Mix until combined.
Spread 1/2 cup of mixture on one side of the tortilla.
Tightly roll the tortilla from one end to another. Place in fridge for 1 to 2 hours to chill.
Remove from fridge and cut into 1-inch slices.

recipe number FIVE
Tomato + Boursin Puff Pastry
What you need:
1 can of crescent rolls
1 package Garlic & Herb Boursin cheese
1 large tomato
Basil seasoning
Grated Parmesan cheese
Olive oil
Parchment paper
How to make:
Preheat over to 375 degrees.
Slice tomatoes about 1/4 inch thick.
Layer a drizzle of olive oil, parmesan cheese, and sliced tomatoes on a pan lined with parchment paper.
Open the crescent rolls and separate them into four squares. Spread Boursin cheese on crescent rolls and place on top of tomatoes.
Bake for 9-12 minutes or until golden brown.
Remove from oven and flip the pastries over. Drizzle with olive oil, and sprinkle with more grated parmesan and dried basil seasoning.
